Swiss Chard, Pinto Beans, & Fire Roasted Tomato Stew

Prep time: 10 minutes Cook time: 15 Minutes Servings: 4

Ingredients:
(Use organic whenever possible)

  • Tablespoon extra virgin olive oil
  • 3 cloves minced garlic
  •  Red pepper flakes to taste
  • 1/3 cup chicken broth
  • 1 bunch rainbow swiss chard leaves torn into bite size pieces
  • 1 (15 oz) can pinto beans rinsed and drained
  • 1 (14.5 oz) can diced fire roasted tomatoes drained
  • 2 Tablespoons fresh lime juice (about 1/2 lime)
  • Zest of one lime
  • Salt and pepper to taste
  • 2 oz. Crumbled goat cheese
  • 1/4 cup fresh flat leaf Italian parsley

  1. Heat oil in a large skillet over medium heat.
